How Its Made

Distillation is a dance–part art, part science. Our skilled master distiller, Laurent Lafuente, choreographs the show. At centre stage is a hand-hammered copper pot still turning our apples, BC honey, wild botanicals and other fine ingredients into aromatic brandies, gins, rhumbs (rum), vodka, and fortified spirits.

It all begins with our farm-grown cider apples, BC honey, pure botanicals, and seasonal local fruit, all grown without pesticides or herbicides.

We ferment our raw ingredients to produce cider and fruit wines without added sulphites, stabilizers or other chemicals. The result is a clean, pure expression of flavour.

Our spirits are distilled in a 200L German alembic copper still. We carefully distill and blend each batch twice or more to achieve the desired characteristics of a given type of spirit.

We age our spirits before bottling to allow them to reach their peak. Our clear spirits are aged in glass or copper vessels while our darker spirits are slowly aged in oak barrels to impart flavour and depth. Our vintage spirits are aged for 10 years or more.

We use a semi-automated process to hand bottle, cap and label our spirits on-site. The final product will have passed through many hands before ever leaving our farm.
