The Speakeasy Club is an invitation to follow our spirits from orchard to cask, and to experience Merridale in a deeper, more intentional way. Rooted in the Cowichan Valley, everything we make is shaped by time, land, and restraint. Apples grown steps from the still. Fermentation guided by the seasons. Whisky allowed to evolve slowly, without hurry.

Following Our Whisky
Our whisky is shaped slowly, guided by seasons, cask, and time. It is not rushed and it is never released all at once.
Following our whisky means returning year after year, tasting how it deepens, settles, and finds its balance. Each annual release marks a moment in that journey, a snapshot of where the whisky is right now and where it is headed next.
Through the Speakeasy Club, members are invited to follow this progression as it unfolds. Not just the finished spirit, but the story behind it. Each release reflects patience, intention, and the quiet satisfaction of letting time do its work.
This is whisky as a relationship, built gradually, tasted often, and understood over time.
Release History
Our release history is something we hold close. It is a record of where we have been, what we were curious about at the time, and how our distillery has grown year by year. Some of these spirits were fleeting moments. Others are still with us. All of them matter.
Each release marks a season in our story and together they form a timeline we often return to, tasting, reflecting, and learning from as we continue forward.

Some of these spirits are still available and continue to be poured, shared, and enjoyed. Others live on as reference points, reminding us how far we have come and guiding where we go next.
