Behind The Scenes: The Story of Aura Gin

For the past few years, we’ve been hard at work here at the Merridale Farm, testing new flavour combinations and ingredients. Our commitment to craft spirits that celebrate the Cowichan Valley inspired us to create Aura Gin, a one-of-a-kind spirit that not only tastes amazing but is equally beautiful. The name Aura Gin represents a combination of peace, wisdom and gentleness which is the energetic imprint surrounding this violet colour. 

Distiller and co-owner of Merridale, Rick Pipes, explains: “The flowers combine to act as a natural ph indicator. The alkalinity of the gin when combined with an acidic mix, causes the Gin to actually change colour before your eyes. You can watch your gin turn from deep purple to pink as the PH changes.” Not only is Aura Gin a delicious experience for your tastebuds, it also offers an impressive and beautiful experience for all of your senses as you slow down and savour this stunning new spirit from Merridale.

Merridale gins feature more than 40 wild and native botanicals foraged from across Cowichan. 

Local deciduous and coniferous trees, along with ground cover herbs and locally sourced berries, all contribute to a truly local flavour profile. Our gins have earned a Merit in Terroir from the Canadian Artisan Spirit Awards. 

Our Copper Gin is further barrel-aged in French oak casks that previously held Cowichan Valley red wine. This gives the gin its distinct copper colour and a subtle wood character that further enhances the botanicals.
